Caribou coffee is not great coffee. Peet's is known for extremely over-roasted, very dark coffee. The darker a roast, the less the original species flavor is left in the cup. It's a good way to mask the taste of cheaper beans. I roast my own beans at home, on the stovetop, in a heavy cast iron pan (you need a good fan). It's about half the cost of retail beans, and you can get any beans you like. The whole process takes 6 minutes!
From Wild Fermentation by Sandor Katz, try fermented beets-the sour beets make the best beet borscht you have ever had. It's just 5 lbs peeled, grated beets, 3 tsp salt mixed in, then mash everything down with your fist, and cover with a plate and weight in a crock. After a few days, slimy purple stuff will rise to the top-this is pure beet pectin! just skim it off-it's harmless. After a few weeks, you'll have wonderfully naturally fermented sour beets. Pack in a large jar and refrigerate for the time you will make borscht!
