Since opening 27 years ago in a renovated 19th-century home in Amherst, Hot Dog Heaven has plated up more than 10 million all-beef franks. The regulars recommend a ballpark hot dog that's topped with melted cheddar cheese and chili sauce made from a secret medley of vegetables, spices, and pinto beans. For a south-of-the-border kick, add a layer of jalape–o peppers and a squirt of Louisiana hot sauce. And for a side order, try the heaping baskets of freshly sliced French fries made from peeled Idaho spuds in cholesterol-free canola oil.
