What do you get when you combine two muscular, tattooed guys, an old S.W.A.T. truck, and tacos? Either an episode of Cops shot in Mexico or the Fired Up Taco Truck.

Chef Brian Finks and Gaven Rupert partnered up last year after working the Cleveland restaurant scene together, including stops at Pier W and Lola Bistro.

"We just wanted to do our own thing," says Finks. "We wanted something of our own, so we built something that's a good product. It's a traditional street food, but we wanted to put our own little twist on it."

While the menu changes daily, a signature item is the chorizo taco, served with black beans, pineapple, cinnamon- chipotle salsa, and bacon-cheddar cheese. Chicken, beef, and veggie tacos also show up on a regular basis, along with seasoned fries. Just one Mexican morsel will set you back $3.50; or you can get two items of your choice for $6.

As for the origins of that S.W.A.T. truck, Finks says he has a family member who frequents automobile auctions. Finks told him to give him a call if he ever came across a suitable rig. The next day he got a phone call and the S.W.A.T. truck was on its way.

That was ten months ago. Eight months of labor later – including the installation of a fryer, coolers, sinks, and a 6-burner stove – the taco truck was ready to hit the streets. — Justine Stump
