It's been just two months since Athan Zarnas, 26, launched Cracked Mobile Foods, one of the latest in an ever-growing collection of Northeast Ohio food trucks. Cracked's logo cleverly depicts a broken egg, a fitting symbol for the house specialty: breakfast.
"We just thought that breakfast food was kind of a niche," says Zarnas. "Nobody else seemed to be doing it, and a lot of the other trucks now don't like to because it's a departure from their regular menus."
Plus, breakfast has proven to be a big hit with the clubbing crowd. Cracked can often be found downtown in the wee hours of the morning serving up bacon and pancakes to the tipsy masses.
The trick is in yielding tastefully unique results. To that end, Zarnas griddles his pancakes in duck fat — a move that sounds peculiar only until you've tasted one — then serves them with Ohio maple syrup and blueberry confit. He'd love to see the $4 dish become Cracked's signature offering.
In other options, breakfast sandwiches are $7; and scones, pastries, and Greek yogurt with homemade pecan granola and peach saba go for $4.
A Cleveland local, Zarnas likes to buy domestic whenever possible."My garage is right behind the West Side market," he says. "Most of our ingredients come from there, and I try to buy locally grown ingredients whenever possible.
