For Kelly and Sandy Waddell, running a food truck is a lot like marriage: lots of stress, sweat, and tears, but still strangely satisfying.
The couple owns and operates the two-year-old Nosh Box food truck, which specializes in comfort food. "We got the idea from the first season of the Great Food Truck Race," says husband Kelly. "We were watching it on TV and thought our food was as good as any."
All the recipes are Sandy's. While she has no formal training as a chef, she's from the South and a mom of two boys; that counts for something, right?
As for Kelly, he had a hand at remodeling the former DHL delivery truck into a fully functioning kitchen on wheels. Now he mans the grill.
"Our menu is ever-changing," he says. "We cook what's fresh and available. We get ingredients locally, as much as possible."
While a "nosh" is generally understood to mean a light snack, that hardly applies here. The Waddells' hearty fare ranges from Southern barbeque to a "double-wide" mac & cheese sandwich with bacon.
Kelly says his favorite item is the Jimmy Buffett Burger: a patty of ground Angus beef, grilled onions, double cheese, and two strips of applewood smoked bacon, all loaded onto a ciabatta roll.
Everything on the menu comes in at no more than $10.
"Business has been been great," says Kelly. "It's growing and our reputation is good. But by the end of the lunch rush, we're ready to be done!"
