There's a high bar set for joints that tout their "fresh and local" pedigree. Hospitality pro Nathan White knows that well: That's why the food and beverage manager at the Cleveland Airport Marriott includes organic beers from Rockmill Brewery on the Amp 150 drink menu. A small-production operation in Lancaster, Ohio, Rockmill models its suds after those made in Wallonia, Belgium, where the water is similar to their own deep well. The result is brews like the über-autumnal Saison: earthy, rustic, and complex, with spice in the aroma and a jolly 6.5% ABV. For his soon-to-be-famous Rockmill Cocktail ($8), White adds St. Germain's elderflower liqueur and a swish of freshly squeezed lemon juice. Now the result is a golden, effervescent libation bursting with notes of hops, citrus, and blossoms — all capped beneath a translucent veil of lacy white foam.
