Part chemist, part craftsman, Adam Gidlow produces fine artisanal breads, bursting with honest wheat flavor and giving off clouds of nutty, toasty aromas. French baguettes are the real deal, with crisp but pliable crusts; rustic Italian loaves are an epiphany; and croissant-like sticky buns are a naughty dream.
