Apparently not content merely to own one of the city’s top restaurants, chef Karen Small (Flying Fig
) has turned to tempting the entire nation’s tastebuds, with her recipe for Goat Cheese Mousse with Red-Wine Caramel, featured in the April issue of Food & Wine.
F&W operative Kristin Donnelly had discovered the starter last summer, during a whirlwind reconnoiter of our fair city’s dining scene. “She liked it, and asked for the recipe to hold until spring, when strawberries are back in season,” explains the chef.
