After nearly five years, Brandon Chrostowski is leaving L'Albatros and Zack Bruell restaurants to focus on EDWINS Leadership & Restaurant Institute, his restaurant training program. His last day at L'Albatros is April 6.
"It's time; everything is coming together with the program," says Chrostowski, who says that he informed his boss two months ago. "I'd love to tell all our guests a big thank you for supporting me over the years."
Bruell promises that while Chrostowski will be missed, there will be no gap in service moving forward.
"Will he be missed? Yes," Bruell says. "But the way he did things is the way I do things. He was part of a system. We are not changing things around, we are changing people around."
Kim Paradise will return to L'Albatros as general manager and Rob Labuda will be promoted.
"I always look at change as a good thing," adds Bruell, who says the shift will speed up changes long in the works. "We started out with 25 employees and have grown to 225 employees. You have to take advantage of that size."
One of the plans is to expand the award-winning cheese program to his other restaurants: Chinato, Cowell & Hubbard, and possibly Parallax.
