St. Martin's Grapeschool founder Michael Sarro takes pride in his reputation as the "Rocky Horror of wine." After all, the flamboyant winemaster has been offering tips on quality vino since 1998. Among this year's vintages, he recommends any Cabernet from Washington state, Syrah from California, and Pinot Noir from Oregon. "But be careful, because Pinot Noir is the new Merlot, and there are many syrupy versions, where they put the cheapest of grapes in it and doctor it up with sugar and flavorings," says Sarro, whose class is named after the patron saint of wine. "The vintner should be courteous enough to attach a bottle of aspirin to the bottleneck, because the wine will give you a headache." Since 1998, Sarro's students have also learned how to pair wines with food and spend $100 on a case of wine, rather than a single bottle. "I teach you how to incorporate wine into your diet so that it becomes part of a healthy lifestyle," says Sarro.
