"We had intended on having food in the initial space," explains co-owner David Spasic. "But we had to do quite a bit of work to get the kitchen up to snuff and get the permitting."
Kitchen manager Mike Broida meanwhile has been waiting patiently for everything to come together. He says that from the beginning the plan was always to offer a different take on fried chicken — the process involves dredging the chicken in rice flour and potato starch, then deep frying twice.
As the kitchen is smaller than some food trucks, Broida says that keeping the menu concise was the only conceivable way to be successful.
"We also believe we're building an experience here, and we didn't want to overload people with too many options," he says.
Once selecting the amount of chicken (2 to 8 pieces), customers can then choose from a list of sauces, like soy ginger or sweet chili garlic to slather over the chicken. Chips or slaw also come on the side.
While the grand opening of the kitchen takes place Tuesday, May 8, those attending the Iron Maiden Launch Party Saturday can expect to get a taste of the kitchen for a soft opening beginning at 1 p.m.
Down the line, a liquor license is also in the works. The kitchen is open until 10 p.m. every day except Sunday, which closes at 8 p.m. The spot, like many in Cleveland, is closed entirely on Monday.
In other news, Superelctric Pinball Parlor has also been instrumental in getting a giant paddle ball statue erected in Gordon Square.
