Change is once again afoot at the Ohio City Galley
. It has been a little more than a year since the incubator-style food hall opened its doors and already we’ve observed plenty of movement. Some of that is to be expected given the nature of the endeavor, one designed to help small business owners test the viability of new concepts.
But already we’ve observed two of the original four tenants depart: The Rice Shop and Poca. A third, the Galley-operated Forest City Steaks, lasted just a few months. Now we are learning that Tinman, home to one of the best double smash burgers in town, will be departing at the end of the year, leaving just Sauce the City, provider of killer hot chicken, as the lone original tenant.
In the plus column are two new concepts by Brett Sawyer and Vince Thomascik
of the Plum
and Good Co.
Pie Squared will sell five pre-designed pies plus a build-your-own model. Sawyer describes the pie as “Rust Belt-style pizza” because it takes its influence from a lot of different regional styles of pizza. They are square, pan-style and feature a naturally fermented sourdough crust. The sandwiches are also square, built on toasted brioche bread, and filled with combinations such as braised kale, mushrooms and caramelized onions and smoked brisket, cheddar and mashed potato puree.
Grains and Greens, the other concept, offers a selection of grain bowls and salads, with much of the menu vegan and vegetarian. There will be protein supplements that diners can add to their bowls. For the salads, Sawyer will be offering his versions of the wedge, Cobb, Caesar and taco.
Both of these stands open Friday, December 13.
As for the future success of the Ohio City Galley, Sawyer is bullish. He reports that recent improvements to the space over a short break have made it brighter and more welcoming. He also believes that the overall concept is sound.
“I think it has a lot of potential,” he says. “I think it’s a great space, I think it’s a great idea, and I think they’ve proven from the Pittsburgh location and the Detroit location that it’s a great way to test the market for new concepts. It’s also nice to not be tied into five-year lease to try something new.”
We have not seen the last of Tinman chef and owner Michael Schoen. He has divulged that plans are in the works to unveil a new food concept at Bottlehouse in Lakewood that should open in late-winter. No word on who or what will be replacing Tinman at the Galley.
