Just a few short years ago, Bill Fitts changed careers, relocated to Northeast Ohio, and began working in restaurants. It wasn't long before he landed a job at Cleveland's top spot, Lola Bistro, where he toiled as a pantry cook. The young cook's hard work and attention to detail soon earned him a promotion to sous chef, where he took his place alongside Lola's top chefs, Derek Clayton and Joe Swan. Three months ago, Fitts was named executive chef of Lolita, Lola's more casual Tremont sister, which has been turning out some of its best food since another talented young chef, by the name of Michael Symon, was working the line. At this point, the culinary world is, as they say, his oyster.
