Food for Thought 

Local chefs dream up on-the-spot recipes to win coveted Iron Fork competition.

As last year's winning chef at A Tasteful Affair, Light Bistro owner Matt Mathlage plates up words of wisdom for the four culinary whizzes who'll compete tonight for the treasured Iron Fork trophy. For starters, "Be as original as possible" with the secret ingredient that must be used in the two dishes they'll prepare. "This is what chefs do every day, so don't sweat it because you're competing against a couple other guys," says Mathlage. "Just be true to yourself."The cook-off pits chefs Brian Doyle of Medina's Great Taste and Adam Schmith of Beachwood's Melange against Cleveland foodies Jeff Fisher of Touch Supper Club and Josh Kabat of Reddstone at Gordon Square. But don't expect Mathlage to relinquish his trophy to the winner. "They gotta make another one," he says with a chuckle. "I'm not handin' nothin' over."
