Bites: Gourmet Burger Spot Opening in Hudson

It's been only about 10 weeks since Shawn and Tiffany Monday parted the doors of their Hudson bistro, One Red Door. But in just another week, the duo will open Flip Side, a gourmet burger bar located immediately next door. Slated to open December 29, Flip Side will specialize in gourmet burgers constructed from all-natural, grass-fed Ohio beef.

Swaddled in reclaimed wood, the 45-seat saloon-style eatery will sport an urban-cowboy feel. Diners will sit at high-tops, along banquettes, or at the concrete bar. A jukebox and TVs will set the chill vibe.

The seven-ounce burgers are griddled to seal in juices and served on toasted sesame brioche buns. Burger options range from the Simplicity ($5), a plain patty with lettuce, tomato, and onion, to the Green Eggs & Ham ($10), fully loaded with prosciutto, warm spinach, basil mayo, and a fried egg. Other toppers include smoked beef brisket, shredded prime rib, and applewood bacon.

There is also a ground turkey and avocado burger, and a Jamison ground lamb burger with curry yogurt and mint cucumber slaw.

In the snacks-and-sides department are Kobe corn dogs, tempura-fried shrooms, house-made potato chips with yogurt and blue cheese dressing, and malt-liquor onion rings. Chef Monday's frites undergo a three-day process that includes soaking, blanching, drying, and double frying — in pork fat. Can you say dreamy? The menu also includes a couple salads, chicken breast or seared tuna sandwiches, and milkshakes made with or without booze. On or about December 31, Mint Café (1791 Coventry Rd., 216-320-9915, will close its doors. The question remains as to whether or not they will ever reopen. "I am not sure yet. I am still thinking about it," says owner Matt Kanegkasikorn, who also runs Peppermint. He says that despite brisk business, and five more years on the lease, he is having trouble keeping the business fully staffed. "I am shorthanded, and I'm tired." Best-case scenario for local Thai fans is that he will remodel and reopen, as he is still debating.
