BOMBA Tacos & Rum to Open Fairlawn Location in May

BOMBA Tacos & Rum, the one-year-old “premium fast-casual” taco concept from the folks at Paladar Latin Kitchen, opened its first location last spring in Rocky River. Next month, it will open up a second location in the Fairlawn area. Located at 3900 Medina Road, in Montrose Town Centre, BOMBA will open its doors to the public on Friday, May 13, 2016.

The popular concept features 20 chef-driven tacos, 75 rum varieties, large plates and other Latin-inspired dishes. The smartly designed 5,200-square-foot restaurant will offer seating for approximately 225 guests and will feature a large patio with garage doors as well as semi-private event space.

The menu is built for sharing, snacking and experimenting. A design-your-own guacamole section allows diners to augment a traditional base recipe with items like pickled jalapenos, candied pepitas, bacon and shrimp. Platters of queso fundido with chorizo, roasted chicken empanadas, and mojo pork tostones are designed for sharing.

A handful of tortas – Latin sandwiches – offer up combinations like chorizo and fried egg, or the Cubano-style with roasted pork, ham, swiss and pickles. Only three entrees are on the menu, each pulled from Paladar’s menu. They include the popular ropa viejo, slow-smoked pulled chicken, and rum-glazed Cuban pork.

The restaurant’s beverage program is well known for its extensive rum selection, which hovers in the 75-bottle range. Rum flights allow guests to sample a variety of styles and flavors, while a list of signature rum cocktails offers a more traditional take. A selection of craft beer features local favorites like Thirsty Dog, Fat Head’s, Great Lakes and Hoppin’ Frog.

“Summit County is one of the fastest-growing counties in Ohio, and the Montrose area in particular really showcases strong existing restaurant sales,” says Andy Himmel, founder and CEO of Paladar Restaurant Group. “Many of our key management are from or live in this area and believe strongly in it, so Copley Township-Fairlawn was a natural fit for us.”
