Sparkling Ginger Cocktail @ Washington Place Bistro

When it comes to celebrating Sundays, a light, bright, go-with-everything bubbly is a no-brainer. But there’s got to be something more interesting to do with Prosecco than mix it with orange juice. Turns out, mixologist Greg Kobunski thinks so too — and he’s poured his sparkly thoughts onto the brunch menu at Washington Place Bistro. “Sparkling cocktails continue to be popular, particularly at brunch,” says Kobunski. “But people are ready to branch out.” That’s what we did during a recent visit, treating our taste buds to a tempting, tingly Sparkling Ginger Cocktail ($8) as a prelude to pot roast hash and fried-egg sandwiches. An eye-opening blend of crisp, semi-dry La Marca Prosecco (a top-rated pick among bubble boosters) and Stirrings all-natural ginger syrup, the cocktail is lighter than a Mimosa, more intriguing than a Bellini, and bracing enough to hold its own against crispy pork belly or maple sausage links. Enjoyed with good friends on the bistro’s sun-filled porch, it’s enough to make Monday seem a world away.
