When it comes time to toast the New Year, a classic cocktail always seems so deliciously urbane. And what could be more classic than a flip — a punchy blend of spirits topped with a head of frothy egg white? At Crop Bistro, the Ohio City Flip ($11) is all that and more: a powerful coalition of Heering's cherry brandy, green chartreuse, fresh lime-and-ginger cordial, and Plymouth gin, all shaken over ice with two fresh egg whites before being poured into a coupe and garnished with grated lime peel. (Fun fact: The shape of the coupe is said to be based on Marie Antoinette's breast.) "The Heering's provides depth, the chartreuse adds herbal notes, and both of them bring out the botanicals in the gin," explains beverage manager and master mixologist Darko Marinkovic.
