Gervasi Vineyard has announced plans to add a distillery and a grandeur boutique hotel to its already elegant 55-acre piece of wine-soaked paradise. The changes may come as early as the end of this year.
“We’ve evolved from what was originally a small winery and small restaurant to a resort," Scott Swaldo owner and general manager of GV Destinations told the Suburbanite
. "And when you’re a resort, you need more rooms than 24.”
The additional 18,000 square-foot hotel, which includes 24 large suites, is going to double the resort's capacity. Guests can expect high ceilings, fire place, king beds and heated floors.
Meanwhile, the distillery is currently formulating new products that are more mainstream like vodka, gin and Italian style liqueurs, but also stay true to its vineyard atmosphere and its Italian style heritage.
When the new distillery opens, guests can experience a cocktail lounge environment as well as an outdoor cigar lounge.
In anticipation of offering their own liquor, Gervasi has already opened a full bar inside its Bistro. Liquor offerings are still in the works, but expect a wine-barrel-aged bourbon.
