Scoop du Jour: Souper Market branches out

Just in time for cool weather, Cleveland’s favorite soup maker, Matthew Moore, has announced the imminent arrival of yet another Souper Market location – the region’s third, and Moore’s first franchised operation. “It’s sort of a franchise with a twist,” says the chef, a long-time proponent of locally grown ingredients and an all ’round thoughtful kind of guy. First, “for quality control purposes,” he will sell franchises only to his fellow professional chefs. And second, in place of a standardized menu for all locations, each individual operator is encouraged to develop signature soups and other items unique to that particular outpost. As it happens, the first franchise, located in Wickcliffe, goes to Moore’s former colleague and trained pastry chef Tim Bradach. Among other things, Bradach will be developing a line of killer brownies and giant cookies; and for the slower summer months, he’s working on gelatos, sorbets, and homemade ice creams. The sweets will be available at all three Souper Market locations, including Ohio City and Lakewood. Like all Souper Markets, the focus will be mainly on carryout, although a 12-seat dining bar will stretch along the front window. A small collection of sandwiches will also be available.
