Dawn of a New Century

Look for the Ritz-Carlton's newest restaurant, Century, to highball it into town on Friday, March 31. The posh dining room and sushi bar is named after the 20th Century Limited, a luxurious New York-to-Chicago train, and will offer a fine view of The Avenue at Tower City as well as plenty of train memorabilia and a mostly-seafood menu of "modern American cuisine." Sushi chef is Korean native Chong Kim, who previously worked in N.Y.C., Boston, and Virginia Beach, and executive chef is Regan Reik, a native Clevelander and Johnson and Wales grad whose extensive experience includes stints at Ritz properties in Virginia and California. Reik will be getting a friendly assist from consultant Troy Thompson -- chef-owner of Atlanta's Fusebox and one of the masters of contemporary regional and fusion cuisine -- during the first six months of operation. Also on board as chef de partie is Culinary Institute of America grad Seth Kaspy, formerly of Willoughby Brewing Company and Hudson Crossings. This must be the place . . . West Siders pining for the dear-departed Jeso are in for a treat with the upcoming opening of Mise, a handsome restaurant in dramatically redecorated space at 10427 Clifton Boulevard. Chef-owner Jeff Uniatowski hopes to wow guests with the 65-seat restaurant's intense decor, plush velvet seating, highly visible exhibition kitchen, and an eclectic menu of contemporary American cuisine. Uniatowski left his post as exec chef at Playhouse Square's Ciao! in January to start work on the new spot, although he has been dreaming about it for nearly a decade. The CIA grad recently papered over the windows to keep interior developments under wraps, but the paper will come off the night before Mise opens, which he hopes will be in early April. The name comes from the French culinary term "mise en place," which describes the process of putting everything in order before one begins to cook.

Good Will Eating . . . We gotta eat, so it's doubly satisfying to help a good cause in the process. Upcoming opportunities include a Sunday, March 26 visit from the traveling celebrity-chef tour "Food Network Live," from noon to 5 p.m. at the IX Center. Attractions will include cooking demos by the likes of Michael Symon (Lola), Michelle Gaw (Watermark), and Michael Herschman (Mojo); a chance to meet TV celeb-chefs; tasting stations by area restaurants; and a live performance of Ready . . . Set . . . Cook! Tickets can be had at area Tops stores; a portion of the proceeds benefits Harvest for Hunger. On Monday, March 27, at 6 p.m., 15 of the area's top chefs will take part in "Flavor of Cleveland," a five-course extravaganza at Windows on the River. Participating chefs include Symon, Donna Chriszt (J Café), and Mike Longo (Market Square Bistro). For more info, call 216-761-7865; proceeds benefit the American Liver Foundation. Finally, Moxie will host a seven-course dinner on Monday, May 1, to benefit the James Beard House. Exec Chef Doug Katz will be joined by chefs from such national hotspots as Little Nell (Aspen), Rialto (Cambridge), and Café Boulud (N.Y.C.). By the time you read this, tickets are likely to be sold out for this event.
