"I'm excited but I am definitely a little nervous," says Rachael Spieth, the new executive chef for the soon-to-open Press Wine Bar in Tremont. But, she says, after spending the better part of the past eight years as top toque at the popular Three Birds/Georgetown in Lakewood, she's eager for a change. "I started there about three months after it opened, in 2003. I think it's time I try something new."
Set to open in November, the wine bar is currently taking shape inside the former Lago space at 2221 Professor Ave. The management team includes hospitality pros Sherman DeLozier and Dave Rudiger of Southside and John Owen of Market and Rocky River Wine Bar.
As for the food, "the menu is still up in the air," says Spieth. "We know it will be appetizers, flatbreads, meat and cheese boards, sandwiches, desserts, and a small number of main courses. But we're still working out the exact items."
