Former Vivo, Mojo Chef Heads Up Aurora Restaurant

After stepping down from dual positions as exec chef and general manager at Vivo, in downtown’s Old Arcade, chef Michael Herschman has taken over as top toque at The Cabin, the rustically upscale, Northern Italian dining room at Mario’s International Spa, in Aurora. The former chef-owner of Mojo (Tremont) and Cena Copa (Cleveland Heights), Herschman has put together what sounds like a mouthwatering menu for his new post, including such tidbits as a wild-mushroom pizza with pecorino cheese, truffle oil, and grapes ($14), lobster-ricotta ravioli with smoked-pepper ragu ($25), and porcini-dusted halibut, with sea-scallop dumpling and warm spinach ($24). Although the menu is Italian at the core, the globally inspired chef has been able to sneak in some international accents, too, including starters like sweet and spicy calamari with carrot threads and scallions ($7), and crispy veal sweetbreads with pistachio mustard ($11). Snuggled into an original 1850s log cabin, complete with fireplace and full bar, the open-to-the-public restaurant serves breakfast, lunch, and dinner until 9 p.m. Monday through Thursday, 10 p.m. Friday and Saturday, and 8 p.m. Sunday. “This is a great opportunity to move the food forward,” says Herschman. “I’m excited about the wonderful staff, the fast-growing region, and simple romanticism of the place.” -- Elaine T.
