Michael Symon’s Mabel’s BBQ Opens Tonight at Palms Casino Resort in Las Vegas

Michael Symon’s two-and-a-half-year-old Mabel’s BBQ in Downtown Cleveland has been so well received that the restaurant was included as part of an ambitious $690 million renovation at the iconic Palms Casino Resort in Las Vegas. That restaurant opens tonight at 5 p.m. PST.

Located on the main floor of the Palms, immediately adjacent to the main entrance, Mabel’s BBQ (4321 W. Flamingo Rd., Las Vegas, 702-944-5931) occupies a prime perch from which to spread the love of Cleveland-style barbecue. Like its Midwestern sibling, this splashy eatery is loosely modeled after the West Side Market, with arched ceilings, exposed brick walls and industrial lighting. Designed by Parts and Labor Design, the restaurant aims to recreate the atmosphere of a traditional smokehouse.



Unlike a traditional smokehouse, this one stretches more than 9,000 square feet, cost north of $4 million to build, and features an exclusive back space dubbed Sara’s, a first-of-its-kind “meateasy” tucked away behind the walls of the restaurant.

“Through Mabel’s BBQ, I’ve had the opportunity to create a barbeque style that Clevelanders can call their own, and I’m excited to do the same for the Vegas community,” says chef Michael Symon. “I think we’re doing something Vegas has never seen before and that’s authentic barbeque, cooked and hand-carved on-site for a real smokehouse experience.”

Mabel’s Vegas will feature slow-smoked favorites like brisket, pork belly, spare ribs and beef ribs, along with “pig parts” like crispy tails, ears and cracklings, tacos filled with pulled chicken, brisket or pork, and classic sides like baked beans, mac & cheese, and poppy seed coleslaw.

To drink, there’s a craft beer and bourbon-heavy beverage program, with limited release bottles being a regular presence.

Out back, a patio is equipped with a custom food truck, games, draft beers, frozen cocktails and space for live entertainment.

Mabel’s is the second of three chef-driven concepts to open at the newly renovated Palms, following Marc Vetri’s Vetri Cucina and in advance of Bobby Flay’s Shark.

“We’re very much looking forward to introducing Michael and Mabel’s BBQ to the Las Vegas dining scene here at the Palms,” says Jon Gray, GM of Palms Casino Resort. “Michael has created a casual gathering place where everyone feels at home, whether they are guests of the Palms or Vegas locals.”
