It’s been just over a year since Edwins debuted in the former Nighttown space in Cleveland Heights, a move that could not have gone better, according to Brandon Chrostowski.
“The people are so kind. The community has been so supportive,” he said.
And there will be more Edwins to enjoy as Chrostowski works on two major expansions into neighboring spaces.
The chef will this year open a new oyster bar in the current C L Barber Salon Family Hair spot just up Cedar.
“Just like something you’d find in southwestern France,” he said. “Just a classic oyster shop with raw foods and some lightly fried options like minnows. Twelve seats at the bar, wines, champagnes.”
A big fridge room will occupy the back half of the space where Chrostowski said they’ll be able to provide instruction and training to staff on seafood butchery.
The second expansion will see Edwins take over the former Zoss Bakery building, which will be transformed into classroom space.
“We’ve always been working out of the basement for culinary classses,” he said. “This is 1,800 square feet with plenty of space for classes. We’ll also have a room for fermentation, making wines and cheeses and spirits.”
The move will allow Chrostowski to utlize the current basement area for a proper Edwins admission office where people can walk in any time of day as well as a potentially providing clinic space for mental health counseling.
While there’s no specific timeline, the chef hopes to have the oyster bar open by summer.
