Last week was another big one for Cleveland's Iron Chef, Michael Symon (Lola, Lolita): Not only did he announce that he'll be hosting the Food Network's third-most-popular show, Dinner: Impossible, but details of Symon's long-rumored Detroit project, in the renovated Book Cadillac Hotel (1114 Washington Boulevard), were finally released. Those include the name, Michael Symon's ROAST, and the opening date: October 26.
The restaurant will be a celebration of heritage meats, focusing on artisanal products and rustic preparations that include curing, wood grilling, and rotisserie roasting. Among the featured dishes, expect to find roasted suckling pig, a dry-aged porterhouse for two, and the chef's signature charcuterie.
Echoing the meaty menu will be the rustic but elegant decor, designed by wife Liz Symon and Cleveland architect Richard Lalli, who also helped with Lola. That means transforming an 8,000-square-foot space into a sophisticated, 200-seat boîte, done up in shades of amber, copper, gold, and red.
Beyond lending the restaurant his name and culinary expertise, Symon and his team will oversee hiring, training, and ongoing operations.
Naked truths: As far back as 2006, New York Magazine was declaring the Big Apple "in the midst of a gnudi craze." Clevelanders, as usual, were left wondering what the fuss was about. So we were stoked to spot the little morsels — like "naked" ravioli filling, sans the pasta wrapper — on the spring menu at the Baricelli Inn (2203 Cornell Road, 216-791-6500), where chef Chris DiLisi crafts each one by hand from eggs, flour, and goat's milk ricotta. "They're very much like gnocchi," DiLisi explains, "but much more delicate, with a wonderful dairy flavor." He dresses them lightly, in a bit of brodo (broth) with morels, ramps, and a touch of EVOO. So there, New York.
That's Krazy! Ron Heinbaugh's mac & cheese spot Cheddar's Café (5800 Detroit Avenue) will henceforth be known as Krazy Mac's Café. Also watch for an Elyria location by July.
