New Donut Venture Coming from Former BonBon Café Owner Courtney Bonning

We don’t know where, and we don’t know when (other than “late summer”), but we do know what. Donuts.

Courtney Bonning, chef-owner of the former BonBon Cafe in Ohio City, is teaming up with Kelly Brewer, formerly with the Cleveland Visitors Bureau and Ritz-Carlton to open the Bigmouth Donut Company. Together they will launch, “a truly unique donut experience never seen before by the donut-craving masses.”

The pair share a love of donuts and a simpatico philosophy that dictates that donuts should always be handcrafted from scratch using the finest ingredients and served hot and fresh. These particular confections, as the name implies, will be “a little fatter than the normal donut.”

“We believe that a great donut is not one that is dipped in chocolate and then topped with some candy,” Brewer explains. “We believe that a finely made donut has four distinct and recognizable components: the dough, the filling, the glaze or finish, and the toppings. All four of these components complement each other to bring a combined flavor that can’t be described until people try them.”

During extensive cross-country donut R&D, the team uncovered a certain unwavering feature present at all great donut shops: the owners all loved talking about donuts, which proved helpful to Brewer and Bonning’s new venture.

“We learned a lot and had a lot of fun researching donuts, and we continue to find great donut shops across the county,” reports Bonning. “Like these great donut shops, we love talking about donuts. We love seeing other people get excited about donuts. Donuts always make people smile. We will provide that experience in our stores and also throughout the area and a lot of great events this fall.”

Following weeks of extensive recipe testing, Brewer and Bonning plan to open Bigmouth Donuts later this summer.

“There is a certain emotional attachment that people have when they think about donuts,” Brewer adds. “We want to bring back that memory and make it even better with our donuts.”
