Funshi Sushi, Ramen and Boba opened in Rocky River this past March, but already the family has plans to expand the brand. Next up for the locally owned group is a location in Beachwood, specifically the former Bomba Tacos space at the corner of Cedar and Richmond (2101 Richmond Rd.). But unlike the original Funshi, this one will offer the unparalleled joys of conveyor-belt sushi.

“We are a family business,” says Christine Xiao, partner and manager. “We have been in the sushi industry for 20 years with Hibachi Sushi but we created a new concept – something fun, you know.”

When it opens later this summer, Funshi will be more in line with the futuristic conveyor-belt sushi operations found elsewhere. Diners will be surrounded by technology in the form of tablet ordering, conveyor belt systems, food delivery and even sushi rolling.

“There will be robot servers to bring out drinks and stuff so it will be a fun place, for sure,” adds Xiao.

Diners will have the option of grabbing things off the belt as they glide by and/or ordering special items to be delivered to their location.

After Beachwood opens this summer, Avon will be next, says Xiao, where a conveyor-belt fueled sushi restaurant will open in fall.
