“There aren’t spots where you can rediscover a lot of these great European beers” Yasaki says. “Those kinds of places and those types of beer selections don’t really exist in town anymore.”
“When I opened Melt, I unwittingly put myself inside of a box that I could not get out of: I was the grilled cheese guy,” he says. Now, “I’m opening a punk-rock bar with really good food.”
“I stayed in Bangkok for almost 10 years and I loved the street food there,” says Smith. “I kept practicing – and I stuck to the flavors of my country – and people love it.”
